Hot food items including grilled chicken, grilled peppers, and grilled onions on the steam table were at holding temps. less than 135 degrees F. Grilled chicken was 122 degrees F. grilled peppers were 112 degrees F. and grilled onions were 128 degrees F. Keep hot food items at a holding temperature at or above 135 degrees F. until serving. Keep hot water bath on the steam table on the maximum temperature setting to maintain proper hot holding temp. of foods. Manager reheated all out of temp. food items listed on the grill to a temperature of 165 degrees F. before replacing on the steam table. 1.5

The refrigerator should be kept set on a colder internal storage temp. to maintain proper cold food temps. Recommend keeping the refrigerator at a setting of 35 degrees F during times of peak usage when the door is being opened frequently.
