CDI-EHS provided both a paper and digital form of the plan. Please keep the full plan onsite to be in compliance with this requirement during the next inspection. If PIC wants to keep it on the counter, it can be held using Time as a Public Health Control to use time instead of temperature to hold the sauce safely. Contact inspector before using this method.
