12. 3-202.11; Priority; Recently received sushi that was prepared at another Food Lion location in Wake Forest, NC was delivered in an ice chest cooler without ice/ice packs and lacking temperature control. Employee was stocking front grab and go case directly from the chest cooler and sushi rolls were as high as 54F. Refrigerated, TCS foods shall be at a temperature of 41F or below when received. CDI- Delivery was just received and facility was allowed to place sushi rolls in the walk-in freezer to rapidly cool. EHS observed a cooling rate that was within cooling parameters. Delivery procedures need to be altered so that sushi rolls stay cold during transport. 1.0
21. 3-501.16(A)(1) ; Priority; Three out of four pans of chicken wings at the hot bar were holding between 98F-109F with the last pan holding at 144F. Time/temperature control for safety (TCS) food shall be maintained at 135F or above. Chicken wings are held hot from 11a-2p and then removed and allowed to cool in the walk-in cooler to be sold cold. CDI- PIC agrees to voluntarily discard the remainder of chicken wings in the hot bar at 2pm and wings will not be cooled down today due to temperature abuse. Ensure hot foods are processed quickly so that the temperature does not drop below 135F before being held hot in warming cases. Employee also adjusted hot bar unit to a higher setting. 1.5
22. 3-501.16 (A)(2) and (B); Priority; Majority of deli meats in grab and go case were holding at 41F or below with a few packages of roast beef slices holding as high as 44F. TCS food shall be maintained at 41F or less. CDI- The few packages of sliced roast beef were removed from case and scanned out to be voluntarily discarded. PIC agreed to submit a service request to have the grab and go case assessed and ensure it is functioning properly. Ambient air of grab and go case was at 33F and could have possibly been coming out of a defrost cycle. TCS foods must maintain 41F or below even during defrost cycle. 0.0
