Refrigerated, ready-to-eat, TCS food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded for a maximum of 7 days. The day of preparation shall be counted as Day 1. CDI - Prepped foods were less than 7 days old, educated manager on proper date marking and had expiration date corrected. 0.0
35. 3-501.13; Priority Foundation; Observed a container of raw meats thawing in a container at ambient temperature. TCS food shall be thawed: under refrigeration which maintains the food at 41F or less; or completely submerged under running water at a temperature of 70F or below; for a period of time that does not allow thawed portions of the raw animal food to be above 41F.
