3-501.15; Premade items like diced tomatoes and pasta were being cooled in refrigerators in covered containers in amounts greater than four inches thick. Cool food items in refrigerator in thinner amounts and in partially uncovered containers to vent out heat. Recommend placing containers in ice bins in refrigerators during transport to vending sites in order to rapidly chill food product.
