The items in the prep unit refrigerator on the left were 47 degrees because the pans and dividers were missing. Be sure to fill all the spaces with pans and dividers if needed so cold air does not escape. *NOTICE* EFFECTIVE JANUARY 1, 2019, THE NC FOOD CODE 3-501.16 (A)(2)(b)(ii) REQUIRES EQUIPMENT TO BE UPGRADED OR REPLACED TO MAINTAIN FOOD AT A TEMPERATURE OF 41 DEGREES F OR LESS. PLEASE PLAN ACCORDINGLY.

The truck should not operate until you fix or replace the water pump. I'll follow up on Friday August 31 or sooner if you call me at 919-868-9244.
