4-703.11; Priority; Irreversible thermometer was reading at 155F in the dishwashing machine. Dishes being sanitized using hot water shall reach a minimum temperature of 160F to be sanitized. CDI- Establishment has switched to the 3 compartment sink to sanitize dishes. EHS will verify dishwashing machine is at proper temperature during verification visit on 3/22 for other items. Deductions not taken due to this being the establishment's first inspection and first time using the dishwashing machine, but deductions will be taken moving forward.
