Water was added to dilute the sanitizer strength to an acceptable level. Make sure that water makes it to the level mark and always check sanitizer to make sure it is holding at the right levels. There was a lot of build-up inside of the fryer used from mostly french fries. Food contact surfaces are to be cleaned and sanitized. 1.5
