The CFPM should be certified through an ANSI-certified course and exam. See ANSI website for a list of approved courses and exams. Recommend having multiple people certified to ensure there is always a CFPM available. Please note that "food hander" certifications do not fill this requirement. CDI-Manager onsite is scheduled to take the exam. Employee onsite with recently expired certification will renew certification. General manager holds this certification but was not present during this inspection. 1.0
41. 3-304.14; Core; Wet wiping cloth measured at 0 concentration of Sink & Surface Sanitizer when using Sink & Sanitizer test strips. When obtaining sanitizer from the wall-mounted sink dispenser, ensure the sanitizer is moving from the source container to the dispenser through the clear tube. There seems to be a delay between turning on the dispenser and the arrival of the sanitizer to mix with the water so buckets filled right as the dispenser is turned on may not receive enough concentration of sanitizer. 0.5
