TCS* foods: Time-temperature control for safety foods...DISCUSSION: Observed a neon green hose attached to potable water inlet on food truck and attached to exterior faucet of house near by. This hose is not approved for potable water (disconnected during inspection), and house is not approved for obtaining the potable water for your food truck...Mobile food unit or food truck must return to your approved commissary (Cake Town Bakery in Knightdale) every day you operate for food preparation, cooking, cleaning, maintenance, discharging wastewater and filling up with clean, potable water...Vegetables and fruits MUST be washed and prepared/cut in the commissary BEFORE putting on the food truck. They are not to be washed and prepared/cut on the food truck. Foods that are cooked and kept hot must be transfered to the food truck hot (at 135F or above throughout entire product) OR cooled completely to 41F or less BEFORE putting on food truck...Verification visit to be made on Friday, July 19, 2024 to evaluate completion of Item #22 (cold holding of foods) on this report.
