Non food contact surfaces of equipment, shelves, tables sinks, cabinets, refrigerators, ranges, hoods, etc shall be kept clean. The hot box unit and the shelf in the pantry closet were cleaned.

The dish machine does not sanitizer. It is not hot enough for hot water sanitizing, and there is also no chemical residue. Have the machine serviced. A 3 compartment sink is available and in use. The sanitizer at the sink is dispensed at the proper strength.
