We discussed COOLING of chicken today. Hot chicken going into the freezer has caused some problems. It is acceptable to have chicken briefly stored at room temperature. We looked at handouts and discussed that cooling effectiveness is measured by food temperature. Chicken temperature starts around 200 degrees. From the time any part of the food reaches 135F, it shall be 70F or colder in less than 2 hours.
