2. Few personal drinks were stored above bottled waters in the walk-in cooler. Talked to the manager about either storing at the bottom shelf or in a clean container with no cracks. Corrected during inspection. 0.0
11. The quat sanitizer, in the utensil washing sink, was holding above the required maximum of 400ppm. The cafeteria manager went over the process of how they make the sanitizer. There are water fill levels in the basin of the 3rd compartment sink that they go by. (Installed by Sanitech) I talked about still using the test strips to check the strength and make sure the sanitizer is between 200-400ppm. Add water if too strong. If the test strip has a blue color to it, it is too strong. 0.0

17. Sliced tomatoes on the serving line were holding in between the temperatures of 45-54F. Must be held at 45F or below for cold holding. Made suggestion to slice the tomatoes earlier in the morning and keep in the walk-in cooler to ensure temperature requirements are met. The tomatoes were taken off of the line and put in the walk-in cooler. 2.0
44. Outside dumpster lid was open. Keep sliding doors and top lids closed on the dumpster to help prevent anything from getting inside and foods from getting out. 0.5

Make sure the staff are aware of clean and dirty utensils. Make sure that they are not using soiled gloves to get a utensil out of the drawer. 1.5
16. Chicken nuggets and spaghetti were holding below the required temperature of 135F in the hot holding unit. The foods that were holding below 135F were taken out of the unit and put back in the oven to be reheated to 165F. 2.0
