8. 2-301.12; Employees shall clean their hand in a sink equipped as specified under rule #5-202.12. Employees were not able to properly wash their hands at the time of inspection due to no running water under pressure being available on the mobile food unit. 2.0

The hand wash sink was not available for employee usage due to no running water under pressure being available on the mobile food unit. A container of sauces was also being stored in the hand sink at the time of inspection blocking employee use. 1.0
21. 3-501.16(A)(1) ; Priority; Temperature controls for food safety shall be maintained. Grilled chicken, grilled seasoned pork, and cooked beef on steam table were all 120 degrees F. Hot foods must be kept at temps at or above 135 degrees F. until service. Hot water bath on steam table was 118 degrees F. Gas burners for steam table should be left on to keep hot water bath at an adequate temp. to generate steam to heat food stock pans. Staff should check hot holding temps of food on steam table regularly to verify proper holding. Manager pulled out of temp food product from steam table and had staff reheat the product on the grill to a temp. of 165 degrees F. to correct. Manager also turned on all gas burners for steam table to heat up water bath. 1.5

Food containers, food coolers, and containers of drinks and sauces were stored on the floor of the mobile food unit. Some of the food containers on the floor had liquid from a drink dispenser spilling on to the containers. A bin of sauces was stored inside of the hand wash sink. Food product for customers shall be stored away from splash and other sources of contamination. All food product should be stored at least six inches above the floor in a clean and dry location. Manager moved food items away from splash from drink dispenser and removed sauces from hand sink prior to the end of inspection. 1.0
50. 5-103.11; Priority Foundation; The water source and system shall be of sufficient capacity to meet the peak water demands of the food establishment. Management had not refilled water tanks on the mobile food unit prior to starting operations. Water under pressure was not available on the mobile food unit at the time of inspection. The mobile food unit should be taken to it's commissary regularly to refill the water tanks and for regular maintenance. A food grade hose of adequate length is also necessary to connect and refill the water tanks on the mobile food unit from the store where the mobile food unit vends if emergency refills of the water supply are necessary. The mobile food unit's operation permit has been immediately suspended due to lack of running water under pressure. The mobile food unit must remain closed and can not sell food to the public until the permit suspension has been lifted by Wake County Environmental Services after verification of repairs. 0.5

Sliced tomatoes in prep cooler had a cold stock temp. of 43 degrees F. Ambient air temp. inside of all coolers was 44 degrees F. Cold foods must be kept at temps. at or below 41 degrees F. Keep coolers on a colder temp. setting during times of peak usage when lids and doors are opened frequently.
