8. 2-301.14; Priority; Employee wearing gloves cracked raw shell eggs, then wiped hands on clothes/apron, opened refrigerator and began scooping pancake mix onto the grill. During FOOD preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing tasks. When switching between working with raw FOOD and working with READY-TO-EAT FOOD. As this was observed the issue was discussed with the PIC and corrected for the employee to change gloves, explained hand washing requirements, and utensils that were at the grill area where all removed to be washed. Due to DHD outage complications, signature function was working on the web and signature of owner captured digitally within DHD. At the time half of the report was complete in DHD web, and the attached document is the completed inspection in entirety that was provided to PIC during inspection. Once DHD was functioning again, remaining items placed in web DHD to match the written original copy.
