You need a pan covering each space in the top of the prep unit so the cold air does not escape.

Rebecca has your food truck set up so it is a simple an easy operation with little chance of cross contamination. Battering fish and other items is messy. Start out with just fish. Hold the fish in an insulated box with ice. Store the fish on the table with the batter or in the bottom of the refrigerator. Try that, if there is a problem please call me at 919-868-9244. The fish has to stay cold (<41)up until it is battered and then goes directly to the fryer. If you can do it in a sanitary way by not cross contaminating other food items and without making too much mess, I'll allow you to continue and change your permit.
