Food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from raw ready-to-eat foods such as fruits and vegetables, and cooked ready-to-eat food. 16. 4-501.114; Priority; When tested during the inspection, the concentration of the Quat sanitizer in the 3-compartment sink was too low. A chemical sanitizer used in a sanitizing solution for a manual/mechanical operation shall be used in accordance with the EPA-registered label use instructions and shall be used as follows: A quaternary ammonium compound shall have a minimum concentration of 200ppm not to exceed 400ppm, per manufacturer's label. 39. 3-305.11; Core; Packages of produce in the front storage area underneath an area without a drop ceiling, therefore, is considered an unprotected area. Also observed storage of herbs and spices in open containers without overhead protection. Food shall be protected from contamination by storing the food: Where it is not exposed to splash, dust, or other contamination; At least 6 inches above the floor; and in a clean, dry location. Move produce to area with white ceiling tiles and REHS recommends placing lids on working containers of spices/herbs or adding a protective layer on overhead shelving. 1.0
