CDI- reviewed delivery protocol with PIC. They will work with their supplier to ensure that TCS foods are delivered at 135F or above to avoid temperature abuse in the future. TCS foods were placed in the hot holding equipment and will be discarded by 8:00pm if not sold.

3-202.11; Priority; Hot dogs received from USA baseball concessions on Green Level Rd (another permitted food establishment) were observed received at 98 - 102F. Burgers were observed received around 123F. Hot potentially hazardous foods shall be received at 135F or above. CDI- in this case, it was determined that the foods delivered were prepared immediately before delivery and the delivery drive is approximately 12 minutes. Foods were not out of temperature for more than an hour according to supplier. EHS, in consultation with supervisor, allowed this food to be served until 8:00pm (4 hours).
