19. 3-403.11; Priority; Jalapeno Hot Dogs are 95 degrees F on the facility thermometer, 131F according to my thermometer. They are offered for sale on the hot dog roller unit. Procedures call for heating the hot dogs in the warming drawer, then transferring to the roller unit. Reheat to at least 135 degrees F for holding. Hot Dogs were heated further and we discussed proper use of the thermometer. 0.0

Hot Dog registered 36 degrees F cooler than on a digital thermometer and 42 degrees cooler in the wrapped sandwich. Employee training on proper use of the thermometer is needed.
