Educational note: Regarding family style milk service. The rules do not address a specific time frame for which milk may be kept out during family style service. They do indicate that leftover milk served family style shall not be re-served, and so must be discarded at the end of service. From a food safety standpoint, potentially hazardous foods (including milk) are considered not fit for human consumption and shall be discarded if they are out of temperature for more than four hours. You may choose to set an in-house policy that milk will be discarded after a shorter period of time. Educational note: Chemicals stored unlocked in attended kitchen that is locked when not in use. Please be aware that current interpretation of the .2800 Rules is that toxic materials are to be stored in a "locked storage room or cabinet" and that a locked kitchen is neither of these. Store toxic materials (any chemicals in aerosol cans or which have any warnings on the labels other than "keep out of reach of children) in locked storage rooms or cabinets. Kitchen chemical storage corrected during inspection. Improper chemical storage in the kitchen or other areas may result in a 6 point violation and provisional status on future inspections. Contact your inspector if you have any questions about chemical storage.
