Walk in cooler has an ambient air of 46-47 degrees. Foods stored inside of unit are all averaging around 46-47 degrees in temperature. Advised staff to get the thermostat adjusted so that it is holding over 45 degrees and to not cool foods in that unit due to the cold air not being fully sufficient.
Also when prepping foods keep an eye on how long foods will be out of temp. Do not take longer than 4 hours to prep foods if foods are already out of temperature.
