Employee stated this was a thaw rack that had been brought out from the walk-in cooler. Shrimp was moved to the walk-in to cool back down. Meats shall be maintained at 41F or below unless being prepared. Sliding doors were open on display case upon arrival. Closed sliding doors to maintain temperature in unit. Manager to ensure this is not an ongoing issue with equipment refrigeration. CDI- spoke with manager about repeat violation and equipment calibration.
