Cryo-packed meat observed thawing by improper methods - thawing in sink with sufficient water to cover <1 inch of bottom of product, with majority of product extending out of water. Foods shall be thawed by approved methods, including thawing under running water of 70 degrees F or below, thawing as part of the cooking process, thawing in a microwave (if immediately moved to the cooking process) or thawing under refrigeration. Recommend thawing overnight in walk in cooler. If foods must be thawed under running water, recommend using deep plastic pans in sink as thawing basin, as sinks lack overflow drains.
