10. Observed employee foods above cafeteria foods in the walk-in cooler. Employees may keep their food in the walk-in cooler but it should be kept below or separate from the cafeteria food. There is also a reach-in cooler that has been used for staff food only in the past, it is recommended to use this cooler instead of keeping personal food in the walk-in cooler. The drain pipe from the walk-ins is draining onto the floor outside of the units, also pipe is directed on the floor, need to lift the pipe so that it can be cleaned under and need to extend the pipe so that it drains into the floor drain. 0.5

While checking sanitizer concentration at 3 compartment sink, observed blue silicon mats being used to keep air drying items from sliding while air drying. These mats are approved for this use but EHS noticed that there was some water under mats, upon closer inspection, EHS felt a somewhat slimy residue on fingers. This liquid was checked with a test strip and it registered above the maximum limit for sanitizer. This could be due to sanitizer being too strong in the 3 compartment sink in a previous batch of sanitizer or could be from lack of cleaning and build up of sanitizer residual under mats. Be sure that mats are removed and cleaned at the end of each day, as well as the drainboard. Always check sanitizer to insure that it is in the proper range(200-400ppm)
