THERMOMETERS: In deli, will need to look into obtaining a thermometer (such as a digital thermometer) with a suitable small diameter probe which is designed to measure the temperature of thin masses such as meat patties, chicken strips and other thin or small foods...DATE MARKING ISSUES: Ensure workers are familiar with what foods must be date marked for no more than 7 days (with 41F or less hold temperature) versus those that can be held for a longer period of time...NOTE ABOUT PARASITE DESTRUCTION DOCUMENTATION FOR SUSHI AREA: Always remember that supplier letters or invoices need to be specific to the fish that Harris Teeter uses for sushi--not a general letter with all the fish the supplier provides for all their different customers.
