After cleaning, make sure to prop the cutting table board so that they can air dry on all sides, undersides of the boards that were touching the racks were still wet today during inspection. The 3 compartment sink chemical dispenser is plumbed directly into a hot water line under the sink. The sanitizer solution being dispensed into the sink during inspection was 131F. This is not a violation but the high temperature can affect the accuracy of the test strips, causing a false high reading. It is recommended to have a mixing valve installed, either below the sink or at one of the faucets. If a valve is not installed, the solution needs to be allowed to cool before testing, ideal testing temperature is 75-110F.
