At start of inspection, there was cheese dried on slicer blade. Employee stated that slicers are cleaned after each customer and broken down at least 2 time throughout the day. Slicers being used to slice potentially hazardous foods should be cleaned between customers and fully broken down, cleaned, and sanitized at least every 4 hours while they are being used.
When employees are loading chickens in the rotisserie, they need to be careful not to drip onto slicers or other food contact surfaces and to sanitize the handles and knobs of rotisserie that are touched while hands are contaminated with chicken juice.
