If dishes are not being washed, wash, rinse, and sanitizer solutions do not have to be mixed, recommend waiting until dishes need to be washed to make the solutions. At the mop sink, make sure to turn off the water when the sink is not in use, it has a vacuum breaker that is not rated for constant pressure. Leaving the water on and using a connection with a downstream shut off creates a constant pressure situation that could cause the vacuum breaker to fail.
