Numerous dead roaches observed on monitoring traps that also contain large amounts of dust and other debris. No live or dead roaches observed outside of monitoring traps. Dirt and debris indicates that traps may have been in place for an extended period of time and may not accurately reflect current pest control. Strongly recommend that existing monitoring traps be discarded and replaced to aid establishment and pest control service in monitoring for pest activity.
Large quantities of frozen french fries and frozen pizzas observed on carts in kitchen awaiting cooking. All fries and pizzas observed to be hard frozen at time of inspection. Recommend that establishment minimize amount of food that is brought out to await cooking to prevent possible temperature abuse.
Sanitizer in spray bottle observed to be at or slightly above approved concentration range. Work with chemical manufacturer and WCPSS to obtain new instructions for mixing sanitizers for spray bottles. In the meantime, recommend that sanitizer be mixed to proper concentration in sink and then dipped into bottles from sink.

Cheese held in ice bath on prep table was at required temperature at the time of inspection, but cheese was held in a large amount with very little ice. Amount of ice used will not maintain temperature for a long period of time. Cheese was going to be used to put on cheese burgers, however at the time of inspection, the burgers still had not been cooked. Suggest using larger amount of ice for ice bath or smaller amount of cheese, also wait until food is ready to have cheese put on it before removing the cheese from the cooler.
