Re-routing the drain pipe so there are less bends and or using a larger drain after it leaves the cappuccino machine may reduce clogs so you do not need to wipe the drain trough through out the work day. Wet rags used to wipe equipment must be held in a sanitizer solution between uses. You need to store the wet rag in a sanitizer bucket or fix the drain.
