DISCUSSION: Although a 2-compartment sink is allowed for senior congregate nutrition sites, dispensing utensils/small containers used must still be properly washed, rinsed, sanitized and air dried. Follow procedure on utensil washing procedure. Utensils can be washed in left sink, rinsed under running water and then sanitized in right sink (if chlorine bleach is used, approved concentration is 50-200 ppm). During active utensil washing, wash/detergent solution must be at least 110F...WOMEN'S BATHROOM: Only observed one covered trash receptacle in women's bathroom toilet stall. Should have a covered trash receptacle in each women's bathroom toilet stall OR have a central located covered receptacle that everyone can easily use in this bathroom.

DISCUSSION: Although a 2-compartment sink is allowed for senior congregate nutrition sites, dispensing utensils used must still be properly washed, rinsed, sanitized and air dried. Follow procedure on handout given. Utensils can be washed in left sink, rinsed under running water and then sanitized in right sink (if chlorine bleach is used, approved concentration is 50-200 ppm)...Ice machine water supply line has no backflow preventer. The plumbing system must be protected from backflow of a solid, liquid or gas contaminant at each point of use on food service equipment by installing an approved backflow prevention device (dual check valve) on ice machine water supply line. Install double check valve as required (5-203.14 of NC Food Code Manual).
