The dish machine must reach 180F for the final rinse cycle to ensure that the dishes are being properly sanitized. There was on sanitizer bucket that did register any sanitizer at all. Quat sanitizer must be 200ppm to 300ppm at all times. The repair persons came out and repaired the dish machine before the inspection was concluded.
