14. Pizza sauce was at 74F after cooling overnight. A pH meter was borrowed from a neighboring facility and the sauce was at pH 3.8. May want to obtain a pH meter to avoid having to cool foods. If using pH instead of temperature control, facility must always have a properly working and calibrated pH meter on site, as well as a log of readings (at least one reading per batch of sauce). If not properly documenting pH, more aggressive cooling actions must be used. 2.0
