The wash water temp should be 110 degrees or hotter when you are actively washing. 110 degrees is about like a hot shower. It needs to be hot enough but not so hot that you can not get your hands in the water or so that it is a hazard if it were to run over the top of the gloves.

A pre-rinse unit would be helpfull at the utensil sink. It could be installed at the faucet over the pre-wash sink since there is no shelf at that sink. ...... Water is running all over the floor when the sink basins are let out at the utensil washing sink. Come up with a way to prevent so much water from running all over the floor.
