16. 4-703.11; Priority; No sanitizer onsite. According to the PIC, only soapy water is being used at the 3-compartment sink for ware-washing. After being cleaned with soapy water, equipment, food-contact surfaces and utensils shall be SANITIZED. The 3-compartment sink shall be set up as follows: Wash, rinse, and sanitize. CDI - EHS provided guidance. Ware-washing sticker posted and explained. Bleach approved for use with food-contact surfaces obtained by PIC. Bleach shall register 50-200 ppm. 1.5

CDI - Rice to be used within the hour, and if not, rice to be discarded. Hot foods out of temperature may be reheated within 2 hours. It must be discarded if held out of temperature for longer than two hours. ALWAYS keep the hot holding unit plugged in if in-use for food service. 1.5
