1. 2-102.11 (A), (B) and (C) (1), (4) - (16); Priority Foundation; PIC Knowledge/Duties: PIC is not Certified as a Food Protection Manager. Permit limitations are not being followed. Permit states that menu limited to commercially pre-breaded and frozen fish, commercially prepared and frozen salmon burgers, and French fries. Also prepackaged condiments. Permit states that no menu items may be added due to equipment and space limitations. During inspection today observed raw fish being hand dredged in flour mixture before frying, raw shrimp, hand made salmon/breading balls, and handmade coleslaw. The grill top is not in use, being used as counter space only. PIC states the cold-hold equipment is kept on during transport. PIC states that equipment adjusted during the original permitting of truck to allow for hand breading of fish, that it was ok. This is not reflected in the permit on file. REHS today reassessed use of space, consulted with manager, and is Approving adding these additional items to the permit and menu, with the requirement that the salmon balls and coleslaw are premade at the Commissary and cooled to 41F and less BEFORE placing on the MFU, then maintained at 41F and less. If precut slaw mix is not used, and any vegetables cut by hand, make sure to wash the produce before chopping. The fish and shrimp shall be in frozen ready-to-cook form from manufacturer. This is also with the understanding that the grill will continue to not be used, only as to provide extra counter space. Always consult with Wake County Environmental Services before making any menu food or equipment changes/additions. 22. 3-501.16 (A)(2) and (B); Priority; Coleslaw in individual portion cups piled high in top section of prep unit too warm at 53F. Coleslaw in lower section of prep unit at 44F. Salmon/breading balls at 45F. Maintain cold Temperature Control for Safety (TCS) foods at 41F and less. Have the temperature of this unit reduced to provide better cold-holding. Do not overstack TCS foods in the top section of prep unit, that creates temperature issues. Recommend using an ice bath with lid to keep the coleslaw cups cold during service, making sure ice all around sides of each cup. Use pan with holes in the bottom stacked on another pan so melted water can drain out, and have cooler of ice available to add more ice when needed. CDI- Top section coleslaw cups holding above 45F voluntarily discarded by PIC during inspection. Coleslaw cups in bottom section holding at 44F, and salmon/breading balls both moved to chest freezer for active cooling. Ensure the salmon/breading balls and coleslaw both made at the Commissary are cooled to 41F and less before placing on the MFU. 1.5
