TPHC Form on cooler where chicken wings are kept is filled out and states they will label the containers, but items not labeled when removed for cold holding. Person in charge stated they had these sitting on counter before placing back into cooler. Since items were not above 45F, items were moved into walk-in cooler and were cooling after a few minutes. Other items in the reach-in cooler were 41F and below. Reminded about TPHC forms for chicken wings and stated they could do the same for that chicken if discarded after four hours. 1.5
