General Comments
Currently sanitizing and cleaning method onsite is a portable unit. This method is not adequate to reasonably expect utensils and equipment to be washed and sanitized as required unless a staff member is filling vats manually with the attached sprayer hose and sprayer nozzle. Store Manager put in request to have wall mounted system installed at dish sink for proper washing, rinsing and sanitization of food contact surfaces. In the meantime staff members will manually fill dish sink vats using provided portable unit. REHS will return to ensure unit is properly installed.
Greens being washed at dish sink when the 2 compartment prep sink was not being used. The prep sink should be the sink used before the dish sink is ever used to wash produce. If the dish sink is used the vats are to be washed,rinsed and sanitized before and after the produce washing occurs.
